Sant Gall 2011

Named after the patron saint of Biniagual, Sant Gall, honoured every September at the entertaining Fiesta de Sant Gall. Great flavour and perfect for accompanying lunches or dinners with friends.

Grape Varieties: 83% Manto Negro, 10% Syrah and 7% Cabernet Sauvignon.

Production process: Harvested in small boxes of 10-12kg. The grapes are selected by hand and fermented in temperature controlled stainless steel tanks which hold between 4600 and 8850 litres.

Maceration: An average of 15 days.

Malolactic Fermentation: In cement tanks.

Ageing: 12 months in oak barrels, of which 60% are French Oak and 40% American, with a maximum of 3 uses.

Alcohol Content: 14%

Acidity: 4,60

Ph: 3,60
