Harvest: Manual in boxes of 15 kg. First week of September 2010.
Prepared pre-fermentation cold maceration (48 h-10oC). Fermentation in stainless steel tanks at controlled temperature (28oC) and then aged in oak barrels (80% French) for 12 months.

Volatile Acidity: 0.7 g / L
Sugar: <3 g / L
Cork: Natural 49mm
Bottle: 75 cl Elite moss.
Tasting Notes
Color: Red cherry well covered.
Aroma: Ripe fruit with typical varietal Syrah cream (licorice, spices).
Palate: Structured with firm but ripe tannins and a long finish.
Gastronomy: Serve between 16 -18 C. Red meats, stews hunting, fatty cheeses.
