ES SIURELL 2021 - CAN XANET

VINEYARD: Finca de Can Xanet, a two-hectare plot located in the north of Mallorca, in the foothills of the Sierra de Tramuntana, with a slight unevenness of 2.7% on a calcareous soil, and overlooking the Bay of Pollensa.
 
WINE FARMING: The vineyard is cultivated following reasonable practices to obtain quality grapes: plant cover between rows, short pruning, green pruning to keep optimum production, phytosanitary treatments only when essential and using the least aggressive ones for auxiliary fauna, thinning of the bunch after veraison and manual harvest with selection of bunches.
 
VINTAGE: A year with constant rainfall during all months except July and half August. So it was a difficult year.
 
VINTAGE: The harvest of the three varietals that make up this wine took place between August 23 and 29. 3797 Kg of Giro Ros, 4571 Kg of Muscat, and 530Kg of Premsal were used.
Total 8,898 Kg of grapes harvested in boxes of 15 Kg.
 
VINIFICATION: The entry of the white grape into the winery occurs between August 23 and 29, which comes from two different farms.
The two predominant ones are Girò Ros and Muscat and it includes about 500 kg of Premsal to give the wine a point of acidity, since this grape is vinified quite green. A soft pressing was made, of 8,898 Kg of grapes, only 4,040 L of wine came out, which gives us 45% of use. It could be said that it is frankly low, but it allowed us to obtain a true flower must.
Separate vinifications were made for each type of grape,
keeping at 19ºC during the fermentation, the punchings were spaced at two weekly, and at one weekly afterwards keeping the grape at 15º. At the beginning of December, the three tanks were brought together into one, keeping the wine with its lees dripping every two weeks, until it is clarified and bottled at the end of March 2022.

TASTING NOTES:
Fresh and intense, Siurell evokes spring in an explosion of flowers. It smells of stone fruit, toilet herbs and aromas of white flowers. Tasty and balanced, Siurell has a good presence in the mouth with a fine bitterness
