GROWING : Ecological , with applications of some biodynamic techniques.

Winemaking: Maceration before going to the press and fermentation of the must flower and first fraction pressing in new French oak barrels from Allier type at a controlled temperature of 18 º C.

FOSTER : Four months with their mothers and performing batonnage technique .

Production : 3,500 bottles.

BODEGA NOTE : This is a wine that is the balance between fruitiness of varieties, ripe fruits, such as pineapple and melon , and herbaceous and tertiary notes of smoke and toast. The palate is dense, balanced with good acidity and a complex, lingering finish. This wine can be enjoyed immediately, but stored under appropriate conditions develop in bottle new shades in the early years. Pairs well with mild meats, fish spiced and semi-hard cheeses.
