This wine is intended to be a tribute to the women with the name of Catalina from this small, family winery.
The wine is made only in years when the weather allows, and is of very high quality. The most suitable variety for that year is used.
It is the product of our research – a more sophisticated, complex wine.
Wine-making
A double grape selection is carried out, first on the vine and then at the winery. Fermentation lasts 25 days at a controlled temperature of not more than 25ºC. The second, malolactic fermentation is always carried out in oak barrels. In January, the wine goes into new French oak bottles where it is aged for a period of 12 months. This wine has not been cold stabilised, which means it could show tartaric precipitation.
Tasting
Intense, dark cherry colour wine with aromas of black berries, damp earth and chocolate. In the mouth it is structured but elegant and aromatic, marked by plenty of long-lasting sweet tannins.
