VINEYARD: Finca de Can Xanet, a two-hectare plot located in the north of Mallorca, in the foothills of the Sierra de Tramuntana, with a slight unevenness of 2.7% on a calcareous soil, and overlooking the Bay of Pollensa.
 
WINE FARMING: The vineyard is cultivated following reasonable practices to obtain quality grapes: plant cover between rows, short pruning, green pruning to keep optimal production, phytosanitary treatments only when essential and using the least aggressive ones for auxiliary fauna, thinning of the bunch after veraison and manual harvest with selection of bunches
 
WINE VINTAGE:
A hot summer, with little rain throughout the winter and spring, including the veraison stage, and practically nothing between late May and mid-September. The health status of the grapes was optimal.
 
VINTAGE:
The Mantonegro was harvested on September 3, in boxes of 15 kg. (3,805Kg)
 
VINIFICATION:
It was cooled in a chamber at 8 ° C. The grape was de-stemmed on top of the
wooden trunks to avoid having to pump it. It fermented in its own yeasts between 25ºC and 29ºC for 15 days, with two daily punchings, followed by a maceration until September 29th. The malolactic fermentation was done in a tank, before going up to barrels
 
BREEDING:
The wine has been aged for 12 months in barrels (27% 1-year-old barrels and 27% 2-year-old barrels and 46% 3-year-old barrels) and in the bottle, to date.

TASTING NOTES:
Cumas has a cherry color with a low intensity. We can find aromas of red fruit, toilet fruit and a roasted aroma. In the mouth we find an elegant, tasty wine,
long and with fine bitterness
