Production: The grapes are harvested by hand, and each variety separately.
Maceration phases vary between one and two weeks depending on variety. once
completed the two fermentations, the wine continues its aging for 6 months in
French oak barrels. Finally continues its aging in bottle for several
months before being marketed.

Tasting: Intense garnet layer, this wine develops a nose intense aromas of
jam black fruit (cherry, blackberry), pepper and leaves from snuff. The palate is
broad, fleshy and round with a nice spicy finish.

Suggestion: Serve at a temperature of 16 -18 ° C. Accompanies any meal
category, especially red meat (beef, lamb) and cheese.

Process: To elaborate this wine we have selected the best vines of our
vineyard. All the vines have been harvested by hand and fermented
separately. The soaking time varies between two or three weeks. When
fermentation is finished, it’s aged into the best French oak barrels during 15
month. All our barrels are new or have been used for only one wine before.

Characteristics: It has an intense purple colour and its bouquet expresses
grilled coffee, marmalade and berries. On palate, it tastes intensive, long in
mouth and soft at the end. We recognize perfumes of fruits and violet.

Suggestions: It’s a powerful wine which will be great served with red meat,
games, cheese… It’s a unique wine for special occasions!

CARMESÍ MAGNUM JAUME DE PUNTIRO

Réserve red wine aged for twelve months inside American oak casks, rounded and with a noble flavour and spiced aromas. It is elaborated from the variety Manto Negre and complemented with Callet and Cabernet Sauvignon. Carmesí -wich means crimsom- is the colour of the flag of the village of Santa Maria del Camí and certain shades of it can be perceived among the glittering ruby- like colour of the wine. The aromas are vigorous and vinous, with a remarkable presence of wood and ripe fruits such as brambles, with smoked and vanilla tones. Inside the mouth the wine results to be well structured, with a well tamed astringency. The flavour of noble wood and liquorice predominate during the aftertaste.

RIBAS DE CABRERA 2016

It represents the great potential of the old vines of the local variety Mallorca Manto negro. Made only in exceptional harvest years : 1998, 2000 , 2001, 2004 , 2006, 2007 and 2010.

The deep roots of these strains over 60 years , contributing to the distinctive terroir wine from the vineyards of Can Ribas and offer a complex , mature and elegant wines with great fruit expression.

Vino de la Tierra Mallorca

Grape varieties :
60 % Black Mantle
30 % Syrah
10% Merlot

Aging : 12 months
Variety of Barrels: 100 % new French oak .

Preparation:
Handpicked and subsequent passage through double selection table . Long maceration of 40 days to achieve greater extraction and aging in French oak barrels of 500 liters ( black Manto ) and 225 liters ( Syrah and Merlot) . Made with carefully selected from the best ripe clusters of older strains Manto black grape. Majorcan strain is changing and difficult but over the years , and a production limitation is tempered and velvety producing great wines , with pronounced notes of red and black fruit . The grapes from the vines 25 years of Syrah and Merlot also brings structure and depth.

Alcohol content: 14.5%
Life in years : 9-10
Production: 2,000 bottles ( Limited Edition )

Tasting Notes:

Color: Red cherry .
Nose : Mineral Notes and balsamic readily apparent . Aromas of red fruit and ripe black fruits.

Result of over a decade of effort to recoup a Majorcan grape variety that is inexplicably on the verge of extinction. The ancient writings ( including the famous collection of the Archduke Luis Salvador) described it as one of the most recognized varieties for quality wines. In 1998 we graft 200 plants from existing plants only 4 in Majorca and in 2000 we increased the vineyard to 2800 strains. Until the year 2011 has been developed as an experimental wine because until this vintage was not allowed on the market. This ancient native variety produces wines of moderate alcohol and surprising freshness , elegance and similar to wines made from Pinot Noir delicacy .

Vino de la Tierra Mallorca - Ecological

Variety : 100 % Gargollassa

Aging : 12 months

Assorted Barrels: French Oak again and sophomores.

Preparation:
Grapes harvested by hand and carefully selected grain by grain . Then proceed to fermentation at moderate temperatures between 25 and 27 ° C avoiding sobremacerar to extract primary flavors of red fruits and violets Gargollassa . After maceration not exceeding 30 days , the wine is transferred to French oak barrels where it is raised for 12 months.

Alcohol content: 13.5 %
Life in years: 4-6 years
Production: 400 bottles

Tasting Notes:

View: Red garnet with middle layer .
Nose: Delicate aroma of violets, red fruit , with a slight smokiness .
Palate: Fresh and balanced , with a long finish .

ÀN 2020 - ÀNIMA NEGRA

This is a wine made from specific vineyards, whose character reflects several unique factors; the old callet vines (40 to 60 years old) that are only found in Mallorca; the poor soil with good mineral content (iron oxide) lying over calcareous rocks and the fact that the vine roots have to dig deep to compete with fruit trees planted amongst the vines.  The wine artfully reveals all of these qualities.

Grape Varieties: 95% callet, 5% mantonegre and fogoneu.

Rainfall: 350-450mm.

Pruning: Traditional gobelet method.

Production: Grapes are harvested by hand into small 10kg boxes.  Manual grape selection before temperature-controlled fermentation in cement tanks and wooden vats of 5,000 and 3,000 litres respectively.

Maceration: Average of 25-30 days.

Malolactic: Part barrel (approximately 60%) and the rest in cement tanks.

Ageing: 18 months in new, French, fine-grain oak barrels; low to medium toasted. A further 2 months of tank aging prior to bottling.

Ludicrously-low production of less than half a kilo of grapes per vine.
Production: Grapes are harvested by hand into small 10kg boxes. Manual grape selection before temperature-controlled fermentation in 3,000 litre wooden vats.
Maceration: Average of 25 days.
Malolactic: In barrels.
Ageing: 18 months in new, French, fine-grain oak barrels; low to medium toasted. A further 2 months of tank aging prior to bottling.
Alcohol content: 14,5%
