Tasting note: Straw-coloured. Clean and bright, almost crystalline. Frank and clean on the nose. Fruit (tropical pineapple) and fermentation (banana) varietal aromas with very clean floral hints. Light and refreshing attack, which gives way to a balanced and pleasant passage through the mouth; slightly acidic, giving the wine an elegant freshness. Clean retronasal, which confirms the nose with hints of stony fruit (apricot, mango) and banana and green apple aromas. Silky finish in the mouth with a long, refreshing aftertaste that invites you to take another sip.

Originating from colder climates , the renowned white grape Chardonnay
production has a low early and complete maturation in the
center of the island of Mallorca, where Finca Son Bordils is.

Vineyards Chardonnay Son Bordils has an average of 16 years
age, being production in 2018 of 1.2 kg / vine . Located in the
Inca term of 60 meters above sea level , with east-west orientation

calcareous clayey alluvium

The harvest took place between 18 and 20 August 2019.

The wine was cold stabilized and filtered.

Tasting notes:
Color green with golden yellow , bright and luminous reflections. in

Exotic and tropical pineapple, banana and anise. The palate is fresh with notes
minerals and a long, pleasant finish. Truly , this is a
great , and rare, Chardonnay.

Drink :
Serving at 6-8 º C. All dishes served with seafood , and 
with rice dishes like paella.

Varieties
Chardonnay and Prensal blanc

Wine made from the youngest vines on the estate, which are organically grown.

Wine-making
Harvesting is carried out by hand. Then the grapes rest for 24 hours in the cold store, where we lower the temperature to 5ºC. Afterwards, the grapes come into the winery on the selection belt, so we can ensure that they all arrive in perfect condition. We then carry out maceration with the skins in a pneumatic press, where must and grapes are in contact for 4 hours. We take advantage to press only the first fraction of the must, which we divert into a stabilisation tank, where it is naturally cleaned. Once we have the must clean, we allow it to ferment for 20 days in stainless steel tanks at a controlled temperature of not more than 16ºC. When fermentation is over, we allow the wine to rest. After gentle clarification and filtering, we can bottle it.

Tasting
Straw yellow colour with greenish highlights due to its youth.

Medium aromatic intensity, with sensations of fresh, white fruits, like pear, pineapple and mango.
In the mouth it is pleasant, with medium-intensity fresh, fruity flavours.

Serving temperature:
At around 8ºC.

Cuisine:
Ideal for aperitifs and light dishes

Consumption:
Recommended to be drunk during the first two years from the bottling date.
