PRODUCTION

After de-stemming, the most is fermented with skins in new French oak casks of 500 litres, open lid. 5 day pre fermentative maceration. Daily manually stamping during the fermentation period of 20 days. Post fermentative maceration of 5 days before the “débourbage”.

TASTING NOTE

A wine of garnet red colour with medium robe. Intense direct aroma of vegetable notes, red fruits with a balsamic background. Well balanced mouth which shows a perfect harvest. Good smooth acidity with a long after taste of balsamic memories.

Totally manual, selected in boxes of 12 kilos, from the first week of September 2016, looking for the optimum point of maturation.

Elaboration
After destemming, the must is fermented with its skins in new French oak barrels of 500 liters, open lid. Pre-fermentative maceration for 5 days. Bazuqueos manuals daily during the fermentation period of 20 days. Maceration post fermentation of 5 days before the descube.

Breeding
7 months in the same barrel in which ferment the wine. This wine has not been filtered.

Tasting note
Medium ruby ​​red wine. Aroma of medium intensity, very delicate with notes of ripe plum very typical of the variety with a spicy bottom. In the mouth it shows silky with ripe tannins, of elegant step. Post long and balanced taste.

ELABORATION
Controlled fermentation, maceration for 38 days, with pumping over, punching down and délestages that give the wine structure and complexity. A part of the Black Mantle and Syrah ferments in 5000-liter French oak vats to give the coupage more fruitiness and freshness. It came unfiltered.
 
TASTING NOTES
Dark garnet red wine with an upper middle layer. Good intensity aromas, with a clear predominance of black fruits (blackberries and cherry cherries). They are complemented by a spicy background with notes of medium toast and toffee. The palate is frank with a good volume glyceric passage. Ripe and broad tannins that enhance the presence of black fruits. Long aftertaste with hints of liquor fruit.

ELABORATION

Alcoholic fermentation begins in stainless steel tanks at controlled temperature, with daily pumping over, and délestages at medium fermentation for a period of 20 days, after which we finish with a post-fermentation maceration of 5 days before discharging.
 
TASTING NOTES
Garnet red wine, medium layer with cherry red trim. Intense aroma of ripe black fruit (plums, blackberries) complemented by clear notes of roasting (Toffee - Chocolate) and spices. The entry into the mouth is fresh and invites to drink. Its passage is creamy almost sweet with ripe and sweet tannins. At the end of the mouth it leaves us with sensations of ripe fruit and Mediterranean herbs.
